CHEF

Seiji Yamamoto

Born in Kagawa, Japan in 1970. Chef Seiji Yamamoto mastered traditional and authentic Japanese cuisine and basic techniques perfectly. Also Seiji gained on the job training all he wants for a long time. Then he opens "RYUGIN" in Roppongi in Dec 2003, at 33 years old.
The theme of the restaurant is " TO PURSUE POSSIBILITY OF THE JAPANESE CUISINE".

Since the opening of RyuGin, he is often invited to give lectures, sharing the techniques in various food academies and expositions throughout Europe, US and finds himself a mission to be the frontrunner to globalize Japanese cuisine and sharing his creativity to colleagues around the world.

Garnered "2 michelin stars" in Tokyo 2011, 4 years in a row.

March
Promoted RyuGin cuisine for 200 guests during two days at the 5 stars hotel [Hotel Mulia Senayan] in Jakarta, Indonesia.

Collaborated with the chef Luca Fantin for a gWhite Truffleh themed dinner at [Bvlgari il Ristorante] in Tokyo Ginza.

Chosen as one of the Chevaliers of Ordre des Coteaux de Champagne at Grand Chapitre de Tokyo.

Participated The World Cuisine Academic Meeting in Hakodate 2009 in Hokkaido representing Japan.

Participated Asia's first global congress for chefs, Tokyo Taste at Tokyo International Forum.

November
Held a special seminar for chefs in Kyushu at Nakamura Culinary School in Hakata, Fukuoka City. Presented with number of techniques used at RyuGin.
 
Held the pre-launch event for Grand Vintage 2003 by Moet et Chandon.
